Mardi Gras King's Cake
|Margarine||1⁄2 Cup (8 tbs)|
|Grated orange peel||1 Tablespoon|
|All purpose flour||5 1⁄2 Cup (88 tbs)|
|Evaporated milk||1 Can (10 oz)|
|Confectioners sugar||1 Cup (16 tbs)|
|Active dry yeast||2 Tablespoon|
|Warm water||1⁄3 Cup (5.33 tbs)|
|Grated lemon peel||1 Tablespoon|
Combine margarine, milk, sugar and salt in small saucepan.
Heat slowly until margarine is melted, then cook to lukewarm.
With a wire whisk in a large bowl beat 4 eggs; stir in milk mixture.
Sprinkle yeast and 1 teaspoon sugar into warm water in cup (115°F) Stir to dissolve yeast.
Let mixture rest until it bubbles, about 10 minutes.
Add to egg mixture, blend well.
Add lemon and orange peel.
Beat in flour 1 cup at a time to make stiff dough.
Turn out onto a lightly floured pastry cloth or board; knead until smooth and elastic, turning dough occasionally.
Add only enough extra flour to keep dough from sticking.
Preheat oven to 375°F.
Place in a large greased bowl; turn dough to coat all over with shortening.
Cover with a towel.
Let rise in a warm place, away from draft until double in size.
Temperature should be 85°F.
Punch dough down when risen, knead a few times.
Divide the dough in half.
From each half make a rope like roll about 20 inches long.
Start coiling one in the center of a large cookie sheet, which has been greased with margarine.
Keep the coil tight.
Near the end, join the second half with your fingers, then continue to coil until all is used.
Make the end of dough small so you can tuck it under easily.
Lift ring slightly and slip the dry bean into the dough near the center.
Let the cake rise again in the same warm place covered with a towel.
When dough has risen beat remaining egg in a bowl and brush the top of cake with egg.
Bake in oven about 30 minutes, or until golden brown.
It should give a hollow sound when tapped.
Slide carefully to cooling rack.
When cool frost and decorate.
Mix confectioners sugar with water in a bowl until smooth.
Add vanilla or almond flavoring to taste.
Drizzle over cake from a spoon tip until all is used.
Decorate with candied citron, decorettes and dragees.
The person who gets the slice containing the *dried bean becomes KING or QUEEN for the day or the week.
