Ruby Ring Around Cake
|Basic white cake layer||19 Inch|
|Cream of tartar||1 Teaspoon|
|Granulated sugar||1⁄4 Cup (4 tbs)|
|Fresh cranberries||1 Cup (16 tbs)|
Hollow 1-inch center from cake layer.
Beat egg whites until foamy.
Gradually add cream of tartar and sugar; beat until meringue stands in stiff peaks.
Reserve 3/4 cup meringue for rippled topping.
Fill center of cake with meringue; sprinkle top with cranberries.
Fill pastry bag with remaining meringue.
Using ripple-edge tip, form circular meringue ribbon, as illustrated.
Bake in 400 Â°F oven 4 minutes or until meringue begins to turn light brown.
