How about trying out this simple yet delicious Ruby Ring Around Cake! Made n basic white layered cake and with too much of fresh cranberries to bite, this Ruby Ring Around Cake is such a wonderful dessert to serve for any occasion!
  Basic white cake layer 19 Inch
  Egg whites 4
  Cream of tartar 1 Teaspoon
  Granulated sugar 1⁄4 Cup (4 tbs)
  Fresh cranberries 1 Cup (16 tbs)

Hollow 1-inch center from cake layer.
Beat egg whites until foamy.
Gradually add cream of tartar and sugar; beat until meringue stands in stiff peaks.
Reserve 3/4 cup meringue for rippled topping.
Fill center of cake with meringue; sprinkle top with cranberries.
Fill pastry bag with remaining meringue.
Using ripple-edge tip, form circular meringue ribbon, as illustrated.
Bake in 400 °F oven 4 minutes or until meringue begins to turn light brown.
