Easy Yellow Cake

The Easy Yellow Cake is one of my favorite cake preparations that can be served as a dessert. Prepared with baking powder and swans down cake flour, the Easy Yellow Cake are best served on get together and parties.
  Cake flour 2 3⁄4 Cup (44 tbs), sifted (Swans Down)
  Baking powder 3 1⁄4 Teaspoon (Calumet)
  Salt 1 Teaspoon
  Sugar 1 2⁄3 Cup (26.67 tbs)
  Shortening 2⁄3 Cup (10.67 tbs) (At Room Temperature)
  Milk 18 Tablespoon (1 Cup Plus 2 Tablespoons)
  Vanilla 1 Teaspoon
  Eggs 2 , unbeaten

Combine flour, baking powder, salt, and sugar in sifter.
Stir shortening just to soften.
Sift in dry ingredients.
Add 3/4 cup of the milk and the vanilla; mix until all flour is dampened.
Beat 2 minutes at a low speed of electric mixer or 300 vigorous strokes by hand.
Add eggs, remaining milk, and beat 1 minute longer in mixer or 150 strokes by hand.
Pour batter into two 9-inch layer pans or three 8-inch layer pans which have been lined on the bottoms with paper.
Bake in moderate oven (350°F.) 25 to 30 minutes for 9-inch layers and 20 to 25 minutes for 8-inch layers or bake in a 13x9x2-inch pan for 35 to 40 minutes.
Frost with Chocolate Cream Cheese Frosting .
