Unbaked Christmas Cake
|Graham wafers||1 Pound, finely ground|
|Seedless raisins||1 Pound|
|Candied fruit and peel||1 Cup (16 tbs), diced|
|Marshmallows||1 Pound, cut into 0.25 inch slices|
|Orange juice||3⁄4 Cup (12 tbs)|
|Orange peel||1 Tablespoon|
|Shelled brazil nuts||3 Cup (48 tbs)|
|Cherries||6 Ounce, drained (1 Jar)|
|Dates||1⁄4 Cup (4 tbs)|
|Ground cloves||1⁄4 Teaspoon|
Line loaf pan (9x5x3) with 2 strips of foil.
Extend about 3 inches above side of pan.
Place nuts in large mixing bowl; add graham cracker crumbs with raisins, dates, candied fruits and cherries.
In top of double boiler combine marshmallows and remaining ingredients.
Stir until marshmallows are melted.
Add to fruit mixture, blending thoroughly.
Turn into pan; pack down.
Wrap and keep in fridge.
