Betty's Rectangular Red Velvet Cake

Betty demonstrates how to make a Rectangular Red Velvet Cake. This is an easy way to make an elegant and romantic dessert. The next video in Betty's Kitchen will be a Vanilla-Cream Cheese Frosting for this (or any other) flat cake.

Ingredients

Butter 1 Cup (16 tbs) , softened
Sugar 2 1/2 Cup (40 tbs)
Eggs 4
Red food coloring 1 Ounce (red gel paste food coloring, as desired)
Vanilla extract 1 Tablespoon
All purpose flour 3 2/3 Cup (58.67 tbs)
Unsweetened cocoa powder 2/3 Cup (10.67 tbs)
Baking powder 1 1/2 Teaspoon
Baking soda 1 1/2 Teaspoon
Salt 3/4 Teaspoon
Buttermilk 2 Cup (32 tbs)
Cooking oil spray 1/2 Teaspoon (as needed)

Directions

GETTING READY

1. Grease an 11-inch by 15-inch by 2-inch baking dish with cooking oil spray.

2. Preheat oven to 350 degree F.

 

MAKING

3. Use an electric mixer on medium speed to beat butter until light.

4. Gradually add sugar and beat with the butter until mixture is light and fluffy.

5. Add eggs, one at a time, beating well after each addition.

6. Add food coloring and mix until desired color is achieved. Add vanilla extract and beat until smooth.

7. In a large bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. Mix well.

8. Add flour mixture to butter mixture, alternately with buttermilk, beginning and ending with the flour mixture. Beat at low speed after each addition, just until blended.

9. Pour batter into the greased baking dish and bake in the center of the oven for about 35 minutes, checking occasionally to see if a toothpick inserted in the deepest part comes out clean.

10. Remove from oven and place on cooling rack to cool just enough to pour a glaze.

 

SERVING

11. Pour Vanilla-Cream Cheese Frosting on top, cut into slice and serve!
