Well guys school is about to start in a few weeks and I thought it would be fun to share this recipe of the Old Fashioned Coffee Cake from L.A. Unified School District. Yeah, I did a few of my own twists and I think it came out pretty dang good lol. I hope you guys like it.
For coffee cake topping:: | ||
Chopped pecans/Walnuts | 1 Cup (16 tbs) | |
All purpose flour | 1/2 Cup (8 tbs) | |
Packed light brown sugar | 6 Tablespoon | |
Granulated sugar | 6 Tablespoon | |
Ground cinnamon | 1 Teaspoon | |
Kosher salt | 3/4 Teaspoon | |
Unsalted butter | 6 Tablespoon , melted | |
For coffee cake batter: | ||
Cake flour | 3 Cup (48 tbs) | |
Packed light brown sugar | 1 Cup (16 tbs) | |
Granulated sugar | 1/2 Cup (8 tbs) | |
Baking powder | 2 Teaspoon | |
Baking soda | 1 Teaspoon | |
Ground cinnamon | 1 Teaspoon | |
Ground nutmeg | 1 Teaspoon (((fresh grated or pre | |
Kosher salt | 1 Teaspoon | |
Buttermilk | 1 1/2 Cup (24 tbs) (((room temperature))) | |
Eggs | 3 Large (((room temperature))) | |
Vegetable oil | 1 Cup (16 tbs) (((room temperature))) | |
Baking spray | 1 |
GETTING READY:
Preheat oven to 375°.
Grease the baking pan with baking spray.
MAKING:
Heat a medium size skillet and toast chopped pecans in it for 3-4 minutes without burning it.
In a large bowl, combine flour, pecans, granulated sugar, brown sugar, salt, cinnamon, melted butter and mix well to form a crumbled mixture.
For cake, sift together flour, sugar (both types), salt, nutmeg in a large bowl.
In another bowl, combine eggs, buttermilk, vegetable oil and whisk well.
Mix together the contents of both the bowls and whisk well.
Pour the batter into the greased baking dish and spread well. Sprinkle the prepared topping on the top of the cake.
Pop into oven and bake at 375° for 30-35 minutes.
Allow the cake to cool in rack before cutting as shown in the video.
