Angel Food Cake

Ingredients
  Sifted cake flour 1 Cup (16 tbs)
  Sugar 1 1⁄2 Cup (24 tbs)
  Salt 1⁄4 Teaspoon
  Egg whites 12
  Cream of tartar 1 1⁄4 Teaspoon
  Almond extract 1 1⁄4 Teaspoon
Directions

Sift flour with 3/4 cup sugar and salt 4 times.
Beat egg whites with cream of tartar until soft peaks form.
Add remaining sugar, 2 tablespoons at a time; beat well after each addition.
Sift 1/4 cup flour mixture over egg whites; fold in carefully.
Fold in remaining flour mixture by fourths.
Turn into 10-inch tube pan.
Bake in preheated 375 °F oven 35 to 40 minutes or until cake tests done.
Invert pan on funnel; cool completely.
Remove from pan.
