|Lard||3 1⁄2 Ounce|
|Onions||1⁄2 Teaspoon, chopped|
Knead flour with 2 eggs, a little salt and water into a stiff pasta, shaping two loaves of it.
Roll each loaf thin.
Grate cabbage, salt, let it stand for 20 mins., and then squeeze dry.
Melt lard, brown sugar in it, mix in finely chopped onions, then add grated cabbage and saute, stirring often.
Cut the pasta into about 1/2 inch squares and cook in boiling salt water, adding a little lard to the water to prevent pasta from sticking together.
Season cabbage with ground pepper and drain pasta; toss with grated cabbage.
Onions may be omitted if preferred.
If ready made pasta is used, cook 3/4 lb.
