Until you've tasted this salad, you don't know how really good it is! It is a wonderful alternative to your regular salad. On top of that, it is so healthful, and so easy to prepare. I used raw chopped almonds in mine because I had them on hand. I also omitted the sesame oil because I didn't have any. Please try this. You won't be sorry.

This salad really is that good! I made a few sub's/changes/additions... I used a stick blender to puree the avocado w/ the garlic, ginger, oils, lemon juice and tamari. It makes a dressing of sorts that binds the salad nicely. I also left a third of the avocado in small chunks and added it in for texture and visual. substitutions: sweet onion and green onion for red; walnuts for cashews (could also use pecans); flaxseed oil for some of the olive oil; added: cooked, drained navy beans sesame seeds next time: will try diced pears for the apples and will serve aside quinoa or stirred together. I can't wait, but I have to finish what I already made first, which will be no problemo! :^)
