Stuffed Cabbage Leaves

THE LEAVES
1 MEDIUM CABBAGE
Remove the core from the cabbage and steam for 5 minutes over
boiling water.
Carefully peel off 8 - 12 outer leaves.
THE FILLING
Saute
1 MEDIUM ONION, CHOPPED
1 BELL PEPPER, CHOPPED
4 LARGE CLOVES GARLIC, MINCED
In
3 TBS. OLIVE OIL
Remove from heat and stir in
1 - 1 1/2 LBS. FROZEN TOFU, THAWED, RINSED, SQUEEZED DRY AND CRUMBLED
1 CAN (15 OZ.) TOMATO SAUCE
3 EGGS, LIGHTLY BEATEN
1 CUP COOKED RICE
1/4 CUP RAISINS
1/2 TSP. SALT
1/2 TSP. PAPRIKA
1/4 TSP. PEPPER
THE GARNISH
Mix well in a large bowl
1 MEDIUM ONION, SLICED IN RINGS OR HALF RINGS
1 MEDIUM BELL PEPPER, CHOPPED
4 LARGE CLOVES GARLIC, MINCED
1/4 CUP RAISINS
THE SAUCE
Mix together in a medium bowl
1 CAN (15 OZ.) TOMATO SAUCE
1/4 CUP WATER
1/4 TSP. SALT
1/4 TSP. PEPPER
