Basic Kale Salad
|Kale||2 Bunch (200 gm), stems removed and chopped into bite sized pieces|
|Diced tomato||1 Cup (16 tbs) (fresh or sun dried)|
|Avocados||2 , chopped|
|Red pepper||1 , chopped|
|Hemp seeds||2 Tablespoon, hulled|
|Pumpkin seed oil||2 1⁄2 Tablespoon (Austria's Finest)|
|Lemon juice||1 1⁄2 Tablespoon|
|Celtic sea salt||1 Teaspoon|
Massage the kale with the lemon juice, salt and pumpkin seed oil until thoroughly coated. Then add the remaining ingredients and toss. I also add sliced olives as well.
