Farmhouse Cabbage

Ingredients
  Cabbage head 1 Medium, finely shredded
  Salt 1 Tablespoon
  Water 2⁄3 Cup (10.67 tbs)
  Celery heads 4 , diced
  Red pepper 1 , diced
  Watercress 1 Bunch (100 gm), chopped
  Water 6 Tablespoon
  Malt vinegar 2⁄3 Cup (10.67 tbs)
  Artificial sweetener 2 Teaspoon
  Celery seeds 1 Teaspoon
Directions

GETTING READY
1) In a bowl, arrange in layers cabbage, salt and 2/3 water.
2) Leave the cabbage to rest for 2 hours.
3) Using a perforated ladle, scoop out the cabbage and squeeze out the liquid.

MAKING
4) In a bowl, place the cabbage, celery, pepper and watercress.
5) Fold the cabbage mixture lightly.
6) In a bowl, mix together water, vinegar, sweetener and celery seeds.
7) Pour the vinegar mixture over cabbage mixture and toss lightly.

SERVING
8) Serve cold on a flat plate with chicken or beef steak.
