Sweet And Sour Red Cabbage With Apples
|Bacon drippings/Butter||3 Tablespoon|
|Finely chopped onions||1⁄3 Cup (5.33 tbs)|
|Shredded red cabbage||9 Cup (144 tbs) (1 Medium Head)|
|Cored diced tart apples||1 Cup (16 tbs)|
|Cider vinegar||3 Tablespoon|
|Brown sugar||3 Tablespoon|
|Caraway seeds||1 Tablespoon|
|Freshly ground pepper||1⁄4 Teaspoon|
|Raisins||1⁄3 Cup (5.33 tbs)|
Melt drippings or butter in a large, heavy-bottomed saucepan.
Saute the onion lightly in the fat, about 5 minutes.
Add the cabbage.
Stir well to coat the cabbage, cover, and continue cooking over moderate heat for 5 minutes.
Add remaining ingredients.
Cover and cook about another 10 minutes until the cabbage is tender but not mushy.
