Sweet And Sour Red Cabbage

Ingredients
  Unsalted butter/Margarine 1 Tablespoon
  Red onion 1 Medium, slivered
  Red cooking apples 2 Large, unpeeled, cored and coarsely chopped to make 2 cups
  Red cabbage 2 Pound, thinly shredded to make 8 cups (1 large size)
  Cider vinegar 1⁄2 Cup (8 tbs)
  Dark raisins 1⁄4 Cup (4 tbs)
  Light brown sugar 3 Tablespoon
  Ground nutmeg 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon (adjust quantity as per taste)
  Ground cloves 1⁄4 Teaspoon
  Ground black pepper 1⁄4 Teaspoon
Directions

1. In a large heavy saucepan, melt the butter over moderately high heat. Add the onion and apples and saute for 5 minutes or until soft.
2. Stir in the remaining ingredients and toss to coat. Lower the heat, cover, and simmer, stirring occasionally, for 40 minutes or until tender. Serve with Schnitz-Un-Gnepp.
