Cabbage Soup, Amiens Style

Ingredients
  Cabbage 1
  Green cabbage 1 Pound (1 Small, 450 Gram)
  Onion 1
  Potatoes 1⁄2 Pound (225 Gram)
  Carrots 1⁄2 Pound (225 Gram)
  Celery 2
  Butter 4 Ounce (100 Gram)
  Yeast 2 Tablespoon
  Bouquet garni 1
  Water 4 Pint (2.3 Liters)
  Sea salt To Taste
  Ground black pepper To Taste
  Freshly ground black pepper To Taste
Directions

GETTING READY
1. Wash and peel the vegetables as required
2. Rinse and drain the vegetables
3. Cut into shreds and set aside

MAKING
4. Heat the butter in a large saucepan
5. Add the vegetables to the hot butter and sauté for 8 minutes of high
6. Add the yeast extract, bouquet garni and water and boil for 45 minutes.
7. Season to taste
8. Remove the bouquet garni before serving

FINALIZING
9. Tip the soup into a large tureen for serving

SERVING
10. Garnish with parsley and serve with brown toasted wholemeal bread.
