Madame Fraize's Cabbage And Zucchini Skillet

Ingredients
  Olive oil/Goose fat/ bacon fat 5 Tablespoon
  Cabbage 1 1⁄2 Pound, chopped
  Onion 1 Large, thinly sliced
  Zucchini 4 , peeled and cut into 1/2-inch slices
  Garlic 1 Clove (5 gm), finley minced
  Salt To Taste
  Pepper To Taste
Directions

Heat the oil in a skillet and add the cabbage.
Toss it about well, and cover.
Cook quickly for 5 minutes, stirring twice.
Add the onion and re-cover.
Reduce the heat and cook slowly for 45 minutes.
Add the zucchini and garlic, re-cover, and cook slowly for another 30 to 45 minutes.
Add more oil if needed.
Season to taste and cook for another 15 minutes.
Serve very hot with braised meats or boiled beef.
It is good with sausage also.
Makes 6 servings.
