Red Cabbage

Ingredients
  Red cabbage 1
  Oil/Leftover duck fat 2 Tablespoon
  Onion 1⁄2 , finely chopped
  Apples 2 , chopped
  Currants 2 Tablespoon
  Sugar 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Vinegar 2 Tablespoon
Directions

GETTING READY
1) Cut the cabbage in fine strips.

MAKING
2) In a large sauté pan, heat up oil and place cabbage.
3) Add rest of the ingredients and stir well.
4) Reduce heat and cover with a lid. Simmer for 20-30 minutes.

SERVING
5) Serve hot or cold by seasoning with freshly ground black pepper.
