Red Cabbage With Apple

Ingredients
  Red cabbage 1 Medium
  Wine vinegar 4 Tablespoon
  Salt To Taste
  Sugar 1 Teaspoon
  Onion 1 Small
  Bacon drippings/Shortening 1 Tablespoon
  Peeled cored apple 1⁄2
  Water 1⁄2 Cup (8 tbs)
  Flour 1 Tablespoon
  White wine/Champagne 1⁄4 Cup (4 tbs)
Directions

Clean, core and shred cabbage.
Toss with vinegar, salt and sugar.
Saute onion in drippings.
Add cabbage, apple, 1/2 cup water.
Cover and cook until tender but not overdone.
Make a paste of flour and a little cool water.
Add to cabbage and cook a few minutes longer.
Add wine just before serving.
Serves 8.
