Spicy Red Cabbage With Apple And Cilantro

Ingredients
  Red cabbage head 1 Pound (1/2 Medium One)
  Vegetable oil 2 Tablespoon
  Dried red pepper flakes 1⁄2 Teaspoon
  Apples 1 Large, peeled, cored, and cut into 1/4-inch dice (2 Small Ones)
  Freshly squeezed lime juice 1⁄4 Cup (4 tbs)
  Sugar 1 1⁄2 Tablespoon
  Salt 3⁄4 Teaspoon
  Green onions 3 , thinly sliced
  Coarsely chopped fresh cilantro 1 Cup (16 tbs)
Directions

Cabbage.
Cut the 1/2 head of cabbage in half again and cut out the cores.
Slice the cabbage very thin, less than 1/8 inch thick, preferably using a mandoline, cabbage shredder, or the shredding disk of a food processor.
Cooking.
Heat the oil with the red pepper flakes in a large skillet or -wide saucepan over medium heat.
Add the apple and cook, stirring, for about 1 minute.
Add the red cabbage and toss it with tongs to coat it with the hot oil.
Add the lime juice, sugar, and salt, cover the pan, and reduce the heat to low.
Cook until the cabbage is tender, 5 to 10 minutes.
Add the green onions and cilantro and toss together with the tongs.
Taste and season with additional salt or sugar if needed.
