Red Cabbage and Apples
|Red cabbage||1⁄2 , shredded|
|Onion||1 Large, finely chopped|
|Apples||3 , peeled, cored and quartered|
|Boiling water||3 Tablespoon|
|Red wine||3 Tablespoon|
|Brown sugar||3 Tablespoon|
Soak cabbage in a bowl of cold water for 10-15 minutes, then drain.
Melt the butter in a large pan, add onion and saute for 2-3 minutes, add moist cabbage, cover and simmer gently for 10-12 minutes.
Add apples, salt, boiling water and bay leaves.
Cover and simmer gently for 45-50 minutes, until tender and moisture is absorbed.
Stir in wine and sugar, cover and simmer a further 8-10 minutes.
