Pepper Cabbage Relish
|White vinegar||3⁄4 Cup (12 tbs)|
|Granulated sugar||1⁄3 Cup (5.33 tbs)|
|Mustard seed||1 Tablespoon|
|Shredded green cabbage||6 Cup (96 tbs)|
|Diced green pepper||1 Cup (16 tbs)|
|Canned pimientos||8 Ounce, cut into 3/4 inch cubes (2 Cans Of 4 Ounce Each)|
|Red onion||1 , thinly sliced|
About 3 hours before serving: In medium saucepan, combine vinegar with 3/4 cup water, salt, sugar and mustard seed.
Bring this marinade to boil, then simmer 5 minutes; cool.
In large bowl, combine cabbage, green pepper, pimientos, onion; pour on marinade; toss.
Refrigerate, covered, 2 hours, tossing occasionally.
