Purple Passion Cabbage
|Corn oil/Margarine||2 Tablespoon|
|Onion||1⁄2 Cup (8 tbs), chopped|
|Red cabbage||2 Pound, shredded|
|Granulated sugar||1⁄3 Cup (5.33 tbs)|
|Cider vinegar||1⁄3 Cup (5.33 tbs)|
|Lemon juice||1 Tablespoon|
In a saucepan over medium heat melt margarine.
Saute until onion is tender.
Add cabbage, sugar, vinegar, lemon juice, salt and pepper.
Cook for 20 to 30 minutes or until cabbage is tender.
This dish is best made the day before serving and reheated just before serving.
