Unstuffed Cabbage With Turkey

danispies's picture
Stuffed cabbage was an all time favorite growing up in my house. My Mom had it down to a science. The only problem with her recipe was that it took hours to make, and I rarely have that kind of time to spend in the kitchen. So for this QuickBite, I'm making my version, that I like to call UN-stuffed Cabbage.
Ingredients
  Ground lean turkey 1⁄4 Pound
Head of cabbage/0.5 large head of cabbage 1 Small, sliced thinly
  Onion 1 , sliced into 0.5 moons
Red peppers 2 , thinly sliced
  Chopped garlic 2 Tablespoon
  Beef broth/Chicken broth 1⁄2 Cup (8 tbs)
  Purple cabbage leaves 8
Plain fat free yogurt 5 Ounce
  Paprika 1 Tablespoon
  Salt To Taste
Directions

Heat nonstick skillet over medium high heat. Add turkey, season with salt and pepper and brown. Once browned, remove turkey from pan and set aside. Stir onions, garlic, peppers, and cabbage right into the same pan. Season with salt and pepper, then add beer and cover for 10 minutes, stirring once or twice, until veggies are wilted down. Once veggies are cooked down remove the lid. If there is still a lot of liquid in the pan, let it go another 5 minutes or until most of the liquid has evaporated. Add turkey back to the pan. Stir in add paprika, sour cream, and and adjust salt and pepper Once everything has heated through scoop mixture into cabbage cups and enjoy!

BTW instead of having to make "sour heads" for stuffed cabbage, ZerGüt has the leaves in a jar rolled up like grape leaves! ZerGüt products are available at Eastern European Markets and some Halal Markets. like this http://sahadifinefoods.com/product1264_lastcat36.ihtml I like using 50/50 beef/lamb extra lean grind and using Vegeta for seasoning http://www.amazon.com/Vegeta-Gourmet-Seasoning-Sazon-Canister/dp/B0002AZWYC only pay half this amount at the Polish market.
