Spiced Red Cabbage
Spiced red cabbage is a flavorful cabbage recipe fruited with apples and raisins. Cooked along with onions for flavor, the red cabbage is spiced with cloves and allspice. Stirred and slow cooked, the spiced red cabbage is soured with a dash of vinegar and seasoned to taste. served as a side, it is deliciously different.
|Oil||1⁄4 Cup (4 tbs)|
|Red cabbage head||2 Pound, cored and chopped|
|Onion||1 Small, thinly sliced and separated into rings|
|Apple||1 Small, cored and chopped|
|Raisins||1⁄2 Cup (8 tbs)|
|Ground cloves||1⁄4 Teaspoon|
|Ground allspice||1⁄8 Teaspoon|
|White wine vinegar||1 Tablespoon|
Heat Oil in Dutch oven or large saucepan.
Add cabbage, onion, apple, raisins, cloves and allspice.
Stir to coat.
Cook over moderate heat, stirring occasionally, about 1 hour, or until cabbage is tender.
Stir in vinegar, sugar and salt.
