Spring Green Cabbage
|Young green cabbage heads||2|
|Black pepper||To Taste|
Trim away the coarse leaves.
Cut out the tough ribs that run along the center of the leaves.
Wash well in salted water.
Boil rapidly, with the lid off, in a pan of salted water to which a peeled onion has been added.
If the cabbage is fresh, it will be cooked in 10 to 15 minutes.
Drain well in a colander by pressing a plate on top.
Pepper well and glaze with the melting butter.
This should be eaten immediately.
In parts of Ireland this cabbage is finely chopped after it is drained.
I think this takes away from its appearance.
