Cabbage A La Russe
|Finely shredded white cabbage||3 Cup (48 tbs)|
|Sugar||2 3⁄4 Teaspoon|
|Freshly ground black pepper||To Taste|
|Cayenne pepper||To Taste|
|Green pepper||1⁄2 , cut in strips|
|Horseradish cream dressing||1 Cup (16 tbs)|
1. Soak the cabbage in ice water for thirty minutes. Drain.
2. Add the sugar and toss. Season with salt, pepper and cayenne and toss again.
3. Plump the prunes in very hot water; remove the pits. Cut in narrow strips and mix thoroughly with the cabbage, adding the green pepper at the same time.
4. Mix with horseradish cream dressing. Chill.
