Butterscotch Refrigerator Cookies
|Soft butter/Shortening||1⁄2 Cup (8 tbs)|
|Firmly packed light brown sugar||1 Cup (16 tbs)|
|Egg||1 , well beaten|
|Sifted flour||1 1⁄2 Cup (24 tbs), sifted|
|Baking powder||1 1⁄2 Teaspoon|
|Chopped nuts||1⁄2 Cup (8 tbs)|
Blend all ingredients in a mixing bowl until dough can be handled with your hands.
Form into one longer or two shorter rolls; wrap in plastic wrap or aluminum foil.
Chill several hours or overnight in refrigerator.
Slice into 1/8 inch thick slices.
Place on lightly greased cookie sheet and bake in 375-400 degrees oven for 8-10 minutes.
