|Butter||3⁄4 Cup (12 tbs) (Land O'Lakes)|
|Granulated sugar/Brown sugar||3⁄4 Cup (12 tbs)|
|Vanilla extract||2 Teaspoon|
|Quick-cooking rolled oats||1⁄4 Cup (4 tbs)|
Combine flour, baking powder and salt.
Cream butter in large mixing bowl.
Gradually add sugar, creaming until light and fluffy.
Add egg and vanilla extract; beat well.
Stir in rolled oats and dry ingredients; mix well.
Chill dough and Topping at least one hour.
Roll out half of dough on floured surface to 1/8 inch thickness.
Cut into rounds with floured 2 1/2 inch cutter.
Place on ungreased cookie sheets.
Shape Topping into 1/2 to 3/4 inch balls.Place in center of cookie rounds.
Bake at 350° for 10 to 12 minutes until golden brown.
