Butter Nut Drops
|Butter||1⁄2 Cup (8 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Egg||1 , separated|
|Cake flour||1 Cup (16 tbs)|
|Lemon juice||1 Tablespoon|
|Grated orange rind||2 Tablespoon|
|Grated lemon rind||1 Tablespoon|
|Brazil nuts||1⁄2 Cup (8 tbs), ground fine|
|Candied cherries||1⁄4 Cup (4 tbs)|
Cream butter and sugar well.
Add egg yolk and flavoring.
Sift dry ingredients together and add with lemon juice and rinds.
Mix thoroughly and place in covered bowl.
Roll into tiny balls (1/2 teaspoon of dough per ball).
Dip balls into slightly beaten egg white.
Roll in ground nuts.
Place on greased cookie sheet 1 inch apart.
Press 1/2 candied cherry on top of each and bake at 350Â° F. 25 minutes.
