Butter Nut Drops

Ingredients
  Butter 1⁄2 Cup (8 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Egg 1 , separated
  Vanilla 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Cake flour 1 Cup (16 tbs)
  Lemon juice 1 Tablespoon
  Grated orange rind 2 Tablespoon
  Grated lemon rind 1 Tablespoon
  Brazil nuts 1⁄2 Cup (8 tbs), ground fine
  Candied cherries 1⁄4 Cup (4 tbs)
Directions

Cream butter and sugar well.
Add egg yolk and flavoring.
Beat well.
Sift dry ingredients together and add with lemon juice and rinds.
Mix thoroughly and place in covered bowl.
Chill.
Roll into tiny balls (1/2 teaspoon of dough per ball).
Dip balls into slightly beaten egg white.
Roll in ground nuts.
Place on greased cookie sheet 1 inch apart.
Press 1/2 candied cherry on top of each and bake at 350° F. 25 minutes.
