These Oyster Patties are make a delicious snack ! You can try out these sauteed crunchy oyster filled pastries as an appetizer too with your favorite sauces ! Tell me if you like them ! Your suggestions for these Oyster patties are welcome !
  Eggs 4 , beaten
  Scallion stalks 4
  Oysters 1 1⁄2 Cup (24 tbs) (Small)
  Flour 4 Tablespoon
  Baking powder 1⁄2 Teaspoon
  Oyster liquid 1⁄4 Cup (4 tbs)
  Pepper 1⁄8 Teaspoon
  Salt 1 Teaspoon
  Oil 2 Tablespoon

Cut the scallions into 1/2 inch sections and add to the well beaten eggs.
Pour the oysters into this mixture and stir well together.
Sift the baking powder with the flour and make it into a smooth paste with the oyster liquid.
Season with pepper and salt and add to the egg mixture.
Heat a pan and grease it with a drop of oil.
Spoon enough of the oyster mixture to make patties 2 inches in diameter.
Saute for 1 minute on one side or until the pancake sets, turn onto the other side and saute till brown.
Serve very hot.
