Ham Patties

  Prepared mustard 1 Teaspoon
  Cooked rice 2 Cup (32 tbs), cooled (Not Instant Rice)
  Egg yolks 2
  Melted margarine 1 Tablespoon
  Chopped ham 2 Cup (32 tbs)
  Grated american cheese 1⁄2 Cup (8 tbs)
  Margarine 2 Tablespoon
  Flour 2 Tablespoon
  Salt 1⁄4 Teaspoon
  Milk 1 Cup (16 tbs)
  Chopped onion 1 Tablespoon
  Peas 1 Can (10 oz), drained
  Shredded american cheese/Prepared mustard to taste 1 Cup (16 tbs)

Combine first 6 ingredients.
Make into patties, 8 or 10.
Dip in slightlybeaten egg whites then into cracker crumbs.
Re rigerate for a few hours.
Fry in oil for 3 to 5 min.
Serve with sauce:
Melt margarine, add flour and salt.
Cook until blended and add milk all at once.
Cook quickly, stirring until sauce boils and thickens.
Remove from heat and add onion, peas and cheese OR mustard.
Serve over pattes.
