Zucchini Grain Patties
|Shredded zucchini||2 Cup (32 tbs), unpeeled|
|Cracked wheat||1⁄2 Cup (8 tbs)|
|Shredded cheddar cheese||3⁄4 Cup (12 tbs)|
|Onion||1 Small, chopped|
|Crushed rosemary||1⁄4 Teaspoon|
|Sour cream/Yogurt||1 Cup (16 tbs)|
Combine the zucchini, cracked wheat, eggs, cheese, onion, salt, thyme, and rosemary in a medium bowl.
Let sit for 20 minutes.
Form mixture into patties.
Pour oil into a skillet, and fry patties over medium heat until brown on each side.
Garnish with sour cream oryogurt.
