Ham Patties Hollandaise
|Ground fully cooked ham||2 Cup (32 tbs)|
|Long grain rice||1⁄2 Cup (8 tbs), cooked|
|Chopped celery||1⁄4 Cup (4 tbs)|
|Chopped onion||2 Tablespoon|
|Chopped green pepper||1 Tablespoon|
|Cooking oil||1⁄4 Cup (4 tbs)|
|All purpose flour||2 Tablespoon|
|Dry mustard||1 Teaspoon|
|Tomato juice||1⁄2 Cup (8 tbs)|
|Egg||1 , beaten|
|Fine dry bread crumbs||1⁄2 Cup (8 tbs)|
|Easy hollandaise sauce||1⁄2 Cup (8 tbs) (adjust quantity as needed)|
Combine ground ham and rice.
Cook celery, onion, and green pepper in 2 tablespoons oil till tender but not brown.
Blend flour, dry mustard, and a dash pepper into vegetable mixture; add tomato juice.
Cook and stir till very thick and bubbly.
Add to ham mixture, mixing well; chill.
Combine beaten egg and 1 tablespoon water.
Form ham mixture into 8 patties; dip in egg mixture, then in bread crumbs.
In skillet cook patties in the remaining oil over medium heat till browned, 3 or 4 minutes on each side. (Electric skillet 300°.)
Serve with Easy Hollandaise Sauce.
