Turkey Burgers with Sun Dried Tomatoes
|Sun dried tomato halves in oil||8 , drained and chopped|
|Minced turkey||1 Pound (500 Grams)|
|Chopped tarragon||1 Tablespoon|
|Red onion||1⁄2 , finely chopped|
|Smoked pancetta/Rindless streaky bacon||4 , halved|
|Shredded radicchio||2 Tablespoon|
|Shredded cos lettuce||3 Tablespoon|
Place the sun-dried tomatoes, turkey and tarragon in a blender or food processor and blend until smooth.
Spoon the mixture into a bowl and stir in the onion.
Add the paprika and salt.
Mix well, divide into 4 portions and shape into burgers.
Stretch two strips of pancetta or bacon over each burger and secure with cocktail sticks soaked in water for 30 minutes.
Cook the burgers on an oiled barbecue grill or under a preheated hot grill for 20-25 minutes, turning frequently.
Serve immediately in the ciabatta rolls with shredded lettuce.
