Salmon Burgers

Ingredients
For mayonnaise spread
  Nonfat mayonnaise 3 Tablespoon
  Lemon juice 1 Tablespoon
  Whole grain mustard 2 Teaspoon
For salmon burgers
  Salmon fillet 1 Pound, skin removed (1 Fillet)
  Dijon mustard 1 Tablespoon
  Worcestershire sauce 1 Teaspoon
  Reduced sodium soy sauce 1 Teaspoon
  Lemon juice 1 Teaspoon
  Grated fresh ginger 1 Teaspoon
  Garlic 1 Clove (5 gm), minced
  Ground black pepper 1⁄4 Teaspoon
  Olive oil 2 Teaspoon
  Whole wheat hamburger buns 4
  Tomato slices 4
  Red onion slices 4
  Lettuce leaves 4
Directions

To make the mayonnaise spread: In a small bowl, combine the mayonnaise, lemon juice, and mustard.
Mix well.
To make the salmon burgers: Remove and discard any bones from the salmon.
Using a sharp knife, finely chop the salmon.
Place in a large bowl.
Add the mustard, Worcestershire sauce, soy sauce, lemon juice, ginger, garlic, and pepper.
Mix well.
Shape into 4 patties.
Warm the oil in a large no-stick skillet over medium-high heat.
Add the patties and cook for 2 to 3 minutes per side, or until the salmon is opaque and no longer bright pink.
