Parsnip Patties

Ingredients
  Parsnips 4 Cup (64 tbs), pared cored and sliced
  Onions 1⁄3 Cup (5.33 tbs), sliced
  Salt 1 3⁄4 Teaspoon
  Boiling water 1 1⁄4 Cup (20 tbs)
  Parsley 1⁄4 Cup (4 tbs), minced
  Egg 1 , beaten
  Bread crumbs 1⁄2 Cup (8 tbs) (Use Day Old One)
  Pepper To Taste
  Fat/Salad oil 2 Tablespoon
Directions

Cook the parsnips with the onions, and the salt in the boiling water for about 15 min., or until tender.
Drain; mash well.
Add parsley, egg, coarse bread crumbs and pepper.
Chill well, then form into 8 patties.
Roll in finely sifted dried bread crumbs, and saute on both sides in the fat until brown.
