|Parsnips||4 Cup (64 tbs), pared cored and sliced|
|Onions||1⁄3 Cup (5.33 tbs), sliced|
|Salt||1 3⁄4 Teaspoon|
|Boiling water||1 1⁄4 Cup (20 tbs)|
|Parsley||1⁄4 Cup (4 tbs), minced|
|Egg||1 , beaten|
|Bread crumbs||1⁄2 Cup (8 tbs) (Use Day Old One)|
|Fat/Salad oil||2 Tablespoon|
Cook the parsnips with the onions, and the salt in the boiling water for about 15 min., or until tender.
Drain; mash well.
Add parsley, egg, coarse bread crumbs and pepper.
Chill well, then form into 8 patties.
Roll in finely sifted dried bread crumbs, and saute on both sides in the fat until brown.
