Crab Patties

Ingredients
  Crabmeat 1 Pound (500 Gram)
  Fresh white breadcrumbs 3 Ounce (75 Gram)
  Egg yolk 1
  Mayonnaise 2 Tablespoon
  Spring onion 12 , finely chopped
  Egg 1 , hard boiled and finely chopped
  Marjoram 1⁄2 Teaspoon, freshly chopped
  Lemon juice 2 Teaspoon
  Salt To Taste
  Black pepper To Taste
  Cayenne pepper 1 Pinch
  Vegetable oil 4 Fluid Ounce (125 Milliliter)
  Watercress 2 Tablespoon (For Garnish)
Directions

Mix together the crabmeat, breadcrumbs, egg yolk, mayonnaise, spring onions, egg, marjoram, lemon juice, salt and pepper to taste and the cayenne.
Form the mixture into 5 cm/2 in balls and flatten into patties.
Heat the oil in a frying pan.
Add the patties, in batches, and fry for 3 to 5 minutes on each side or until deep golden brown.
Drain on kitchen paper towels and keep hot while you fry the remaining patties.
Transfer the patties to a warmed serving dish and garnish.
Serve hot.
