|Fresh white breadcrumbs||3 Ounce (75 Gram)|
|Spring onion||12 , finely chopped|
|Egg||1 , hard boiled and finely chopped|
|Marjoram||1⁄2 Teaspoon, freshly chopped|
|Lemon juice||2 Teaspoon|
|Black pepper||To Taste|
|Cayenne pepper||1 Pinch|
|Vegetable oil||4 Fluid Ounce (125 Milliliter)|
|Watercress||2 Tablespoon (For Garnish)|
Mix together the crabmeat, breadcrumbs, egg yolk, mayonnaise, spring onions, egg, marjoram, lemon juice, salt and pepper to taste and the cayenne.
Form the mixture into 5 cm/2 in balls and flatten into patties.
Heat the oil in a frying pan.
Add the patties, in batches, and fry for 3 to 5 minutes on each side or until deep golden brown.
Drain on kitchen paper towels and keep hot while you fry the remaining patties.
Transfer the patties to a warmed serving dish and garnish.
