Ground Lamb Patties With Vegetable Medley
|Lean ground lamb||1 Pound|
|Chopped fresh parsley||1 Tablespoon|
|Cayenne pepper||1⁄2 Teaspoon|
|Garlic||1 Clove (5 gm), smashed and chopped|
|Olive oil||2 Tablespoon|
|Zucchini||1⁄2 , cut into sticks|
|Snow peas||12 , strings removed|
|Green pepper||1⁄2 , cut into sticks|
|Yellow beans||12 , pared|
|Boiled onions||1 , quartered|
|Cooked brussels sprouts||8|
? Place lamb, parsley, cayenne pepper, tarragon, garlic, salt and pepper in bowl; mix together until well combined. Shape into 4 patties.
? Heat half of oil in large frying pan over medium heat. Add lamb patties and cook 10 to 12 minutes, turning over 4 times. Season to taste and set patties aside, keeping hot.
? Add remaining oil to pan, still over medium heat. Add all vegetables and season generously. Cover and cook 4 minutes.
? Serve vegetables with lamb. If desired, top with garlic butter or maitre d'hotel butter
