Chicken And Almond Burgers
|Cooked chicken||1 1⁄2 Pound, finely chopped|
|Red pepper||1 , diced|
|Onion||1⁄2 , finely diced|
|Salted almonds||1⁄4 Cup (4 tbs), finely chopped|
|Ground ginger||1 Teaspoon|
|Freshly ground black pepper||To Taste|
|Eggs||2 , lightly beaten|
|Breadcrumbs||1 Cup (16 tbs)|
|Grated parmesan cheese||1⁄4 Cup (4 tbs)|
Place cooked chicken in a blender or a food processor.
Add red pepper, onion, almonds, ginger, pepper and salt.
Add beaten eggs and half the breadcrumbs to the chicken mixture.
Shape the mixture into 6 patties.
Combine remaining breadcrumbs with Parmesan cheese.
Roll patties in breadcrumb and cheese mixture.
Place patties on a double thickness of oiled foil or in an oiled frying pan.
Place foil or pan on barbecue grill above a solid bed of glowing coals.
Cook about 6 minutes each side, turning patties once with a metal spatula.
