Turkey Sausage Patties

Ingredients
  Pear 1 , peeled and cored
  Apple 1 , peeled and cored
  Lean ground turkey 1 1⁄4 Pound
  Chopped fresh parsley 1⁄2 Cup (8 tbs)
  Finely chopped fresh sage 1⁄4 Cup (4 tbs)
  Salt 1 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Ground allspice 1⁄4 Teaspoon
  Red pepper flakes 1⁄4 Teaspoon
  Egg substitute 1⁄4 Cup (4 tbs)
  Olive oil 2 Teaspoon
Directions

1. Coarsely shred pear and apple with a hand grater; press well to drain excess liquid.
2. Combine pear, apple, turkey, and next 7 ingredients in a bowl; stir until blended. Shape mixture into 16 patties (about 2 tablespoons each); place patties on a wax paper-lined baking sheet. Cover, and chill 8 hours or overnight.
3. Heat oil in a large nonstick skillet over medium heat; cook patties, in batches, about 4 minutes per side or until browned and no longer pink inside.
