Veal Patties

Ingredients
  Cooked lean veal 8 Ounce
  Cooked lean ham 2 Ounce
  Nutmeg 1 Pinch
  Lemon 1⁄2 , finely grated rind
  Lemon juice 1 Teaspoon
  Stock 1 Tablespoon
  White sauce 5 Tablespoon
  Parsley 1
  Salt To Taste
  Pepper To Taste
Directions

Chop the veal and ham very finely, and if liked rub through a sieve.
Add the salt, pepper, nutmeg, lemon rind, lemon juice and a little stock to moisten.
Add the white sauce and more seasoning if necessary.
Fill the cases with the mixture, replace the lids and garnish with sprigs of parsley.
Serve hot or cold.
