Salmon Patties

Ingredients
  Mashed potatoes 1 Cup (16 tbs) (With Milk And Butter)
  Canned salmon 6 Ounce, drained, skin and bones removed (1 Can)
  Chopped onion 1⁄4 Cup (4 tbs)
  Saltine crackers 3 , crushed
  Minced fresh parsley 1 Tablespoon
  Salt 1⁄8 Teaspoon
  Pepper 1⁄8 Teaspoon
  Egg 1 , separated
  Vegetable oil 2 Tablespoon
Directions

In a medium bowl, combine the potatoes, salmon, onion, cracker crumbs, parsley, salt, pepper and egg yolk; mix well.
Beat egg white until stiff peaks form; fold into salmon mixture.
Shape into six patties.
Heat oil in skillet; fry patties over medium for 3-4 minutes per side or until lightly browned
