Crab Lace Patties On Lettuce

  Cooked crabmeat 3⁄4 Pound
  Grated parmesan cheese 3⁄4 Cup (12 tbs)
  Minced parsley 2 Tablespoon
  Dry oregano 1⁄2 Teaspoon
  Garlic 2 Clove (10 gm), minced / pressed
  Dry bread crumbs 1⁄4 Cup (4 tbs)
  Green onions with tops 2 , thinly sliced
  Egg 1 , beaten
  Whipping cream 1⁄4 Cup (4 tbs)
  Olive oil/Salad oil 1 Tablespoon
  Firm ripe avocado 1 Large
  Butter lettuce leaves 12 Large, rinsed and crisped

Break crab into flakes.
Place in a bowl; add cheese, parsley, oregano, garlic, crumbs, onions, egg, and cream.
Mix lightly.
Heat 2 teaspoons of the oil in a wide frying pan over medium heat.
Mound 3 tablespoons of the crab mixture in pan, spreading to make a 3-inch cake.
Repeat until pan is filled, but don't crowd patties in pan.
Cook patties until lightly browned on bottoms about 2 minutes; then turn and cook until other side is very lightly browned about 1 minute.
Lift out and arrange on a warm plate; keep warm.
Repeat until all patties are cooked, adding more oil as needed.
To serve, pit, peel, and slice avocado.
On 4 dinner plates, arrange lettuce, avocado slices, and crab patties.
