Beef Patties Dijonaise

  Ground beef 1 Pound
  Chervil 1⁄2 Teaspoon
  Salt To Taste
  Butter/Margarine 3 Tablespoon
  Mushrooms 1⁄2 Medium, sliced
  Green onions 2 Medium, sliced
  Sauterne wine 1⁄4 Cup (4 tbs)
  Water 3 Tablespoon
  Dijon mustard 2 Tablespoon

1. In medium-sized bowl, mix ground beef with chervil and 1/2 teaspoon salt. Shape beef mixture into four 4-inch round patties.
2. Over high heat, heat 10-inch skillet until hot. Add patties and cook until browned on both sides, about 5 minutes for medium-rare or until of desired doneness, turning patties once. Remove patties to platter.
3. In drippings in skillet over medium heat, melt butter or margarine; cook mushrooms and green onions until tender. Stir in sauterne, water, mustard, and 1/4 teaspoon salt. Return patties and meat juice in platter to skillet; heat through, stirring frequently.
