|Prepared mustard||2 Tablespoon|
|Butter/Margarine||1 Tablespoon, softened|
1. Shape ground beef into four 1/2 inch-thick patties. Heat 10-inch skillet over high heat until hot; add patties and cook about 5 minutes for medium-rare or until of desired doneness, turning patties once.
2. Meanwhile, in small bowl, mix Roquefort cheese, mustard, butter or margarine, and salt until smooth.
3. Top each patty in skillet with one-fourth cheese mixture. Cover skillet and cook over medium-low heat until mixture melts.
