|Canned salmon||16 Ounce (1 Can)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Salad oil||1⁄4 Cup (4 tbs)|
|Dry bread crumbs||5⁄6 Cup (13.33 tbs), divided (1/3 Plus 1/2 Cup)|
|Eggs||2 , beaten|
|Dry mustard||1 Teaspoon|
1. Drain salmon, reserving 1/3 cup liquid; set aside.
2. In a 2-cup glass measure, cook onion in oil 2 to 2 1/2 minutes. In a large mixing bowl, combine onion, 1/3 cup dry bread crumbs, reserved salmon liquid, eggs, mustard, salt, and salmon; mix well. Shape into 6 patties.
3. Roll patties in 1/2 cup bread crumbs. Place on roasting rack in a 2-quart baking dish. Cook patties 5 to 6 minutes, rotating dish one-quarter turn half way through cooking time. Rest 5 minutes
