Sunday Veal Burgers

Ingredients
  Ground veal 1 1⁄2 Pound
  Salt 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Paprika 1⁄4 Teaspoon
  Egg yolk 1
  Cream 2 Ounce
  Bread crumbs 1 Tablespoon, sifted
  Chopped parsley 3 Ounce
  Salad oil 1 1⁄2 Tablespoon
  Bearnaise Sauce 1 Cup (16 tbs)
  Tomato puree 2 Tablespoon
  Lean bacon slice 4
  Frozen green beans 1 Cup (16 tbs)
  Butter 1 Tablespoon
  Garlic salt To Taste
Directions

1. Mix the ground veal with seasonings, egg yolk, cream, bread crumbs, and chopped parsley. Shape mixture into hamburger patties.
2. Cook the green beans in butter, garlic salt, and salt.
3. Fry the hamburgers golden brown in the butter
and oil over medium heat, about 2 1/2 minutes on each side.
4. Heat Bearnaise sauce.
5. Place the hamburgers on a hot serving dish. Garnish each hamburger with a crisp bacon slice. Mix the Bearnaise sauce with the tomato puree and pour it on the hamburgers. Place the green beans beside the hamburgers.
