Pati Brisee Shell
|Butter||1⁄2 Cup (8 tbs)|
|Flour||1 1⁄4 Cup (20 tbs)|
|Cold water||2 1⁄2 Tablespoon|
Using knives or pastry blender, mix butter, flour and salt.
As mixture begins to resemble heavy cornmeal, sprinkle water over and toss together.
Gather into a ball and then roll to fit Quiche pan (or pie plate) on a lightly-floured pastry board.
Prick all over with a fork and bake at 400° until lightly browned.
