Black Bean Quinoa Burgers - Awesome veggie burger recipe! This is one vegetarian burger that tastes great, is high protein and cheap and easy to make!
For patties: | ||
Diced onion | 1/2 Cup (8 tbs) | |
Diced jalapeno/Bell pepper | 1/4 Cup (4 tbs) | |
Oil | 1/2 Teaspoon | |
Cumin seed | 1/2 Teaspoon | |
Finely chopped kale/About 2 | 3 leaves | |
Garlic | 1 Clove (5 gm) , minced | |
Cooked quinoa | 1/2 Cup (8 tbs) | |
Black beans | 1 1/2 Cup (24 tbs) , cooked and drained | |
Minced almonds/Pepitas | 2 Tablespoon | |
Grated cheese | 1/4 Cup (4 tbs) (optional) | |
Worcestershire sauce | 1 Teaspoon | |
Salt | 1/2 Teaspoon | |
Breadcrumbs | 1/4 Cup (4 tbs) , divided | |
For burger: | ||
Burger bun | 6 | |
Tomato slices | 12 | |
Ground mustard | To Taste | |
Onion ring | 6 | |
Coriander leaves | 1/2 Cup (8 tbs) | |
Avocado slices | 1/2 Cup (8 tbs) | |
Lettuce leaves | 6 |
MAKING:
1.In a skillet, heat oil and sauté onion, pepper, cumin, salt, pepper and kale. Cook for 2 minutes until soft.
2.Drain the beans and mash coarsely. Add quinoa and sautéed vegetables. Mix well.
3.Add nuts, cheese, worcestershire sauce, salt and 1 tablespoon of breadcrumbs. Mix well to make dough.
4.Shape into 6 patties and coat using remaining breadcrumbs.
5.Heat oil in a skillet and fry for 3 minutes (per side) until golden brown.
6.For assembling, place patties over burger buns, top with mustard, patty, tomato slice, onion ring, coriander leaves, avocado, lettuce leaves and top bun.
