Marinated Bell Pepper Open Burger

Colorful and crunchy bell peppers marinated in herbed olive oil decorate crispy burger buns together with a homemade parsley cream cheese. Ingredients

Burger bun 2
Butter 1 Tablespoon (as needed for spreading)
For parsley cream cheese
Finely chopped parsley 2 Tablespoon
Mayonnaise 1/2 Cup (8 tbs)
Grated paneer 3/4 Cup (12 tbs) (cottage cheese)
Finely chopped onion 2 Tablespoon
Milk 2 Tablespoon
Dry red chili flakes 1 Teaspoon
Grated garlic 1 Teaspoon (Optional)
Lemon juice 1/2 Teaspoon
Salt To Taste
For marinated peppers
Sliced yellow capsicum 1/4 Cup (4 tbs)
Sliced green capsicum 1/4 Cup (4 tbs)
Sliced red capsicum 1/4 Cup (4 tbs)
Olive oil 1 1/2 Tablespoon
Dry red chili flakes 1 Teaspoon
Dried mixed herbs 1 Teaspoon
Salt To Taste
Fresh ground black pepper 1/4 Teaspoon
Lemon juice 1/2 Teaspoon
For garnish
Parsley sprig 4

Directions

GETTING READY

1. Preheat oven to 200 degree C or 400 degree F.

MAKING

For parsley Cream Cheese:

2. In a bowl, mix together parsley, mayonnaise, paneer, onion, milk, chili flakes, garlic, lemon juice, and salt. Divide the mixture into 4 equal portion and set aside.

For Marinated Peppers:

3. In a bowl, combine yellow, green and red capsicum. Mix well.

4. Add olive oil, chili flakes, mixed herbs, salt, pepper, and lemon juice. Mix well and set aside for 10-15 minutes. Divide the mixture into 4 equal portions.

For Burger:

5. Cut bun horizontally into 2 equal halves. Apply butter on each half and bake for 8-10 minutes.

6. Place the baked bun halves on dry work surface, buttered side up. Spread a portion of prepared parsley cream cheese over bun halves.

7. Top with marinated pepper and garnish with parsley sprig.

SERVING

8. Serve immediately and enjoy!
